I think it's just that some of them appear to be really interested in the series and love the show, but can't pay any fricking attention to detail. I blame Everybody Loves Raymond and other idiot television.

@ this point in either the book or the show do catapults exist?

Seen ax-men, calvary, men-at-arms, longbows, crossbows, longswords,sell-swords, axmen, swordmen, & Knights.
How does one seige?

Catapults do exist...I think in the books it was Joffery that had a couple of men catapulted somewhere with stag horns nailed to their heads.

Yep he was catapulting this guys in ACOK, and some catapulting in ADWD in Mereen as well.
