I'm sure Tommon would have a claim. And Margary would make one as well. She has the commoners on her side. And I remember a quote from her from a few seasons ago. I forget who she was talking to but he asked her if she wanted to be a queen. She said no I want to be THE queen. She's motivated for sure. Also I get the feeling the Tyrells believe a world without Lannisters is a better world.

If Cersei did it to stay queen, why wait until the wedding day? She had plenty of other opportunities to kill him. That lends itself to the idea that Dontos did it because he wouldn't be able to get close to Joffrey at any other time except for that day.

To be fair, after the Red Wedding the groom (Edmure Tully) is still alive, though in a dungeon. It was supposed to be Robb's wedding.
