I could pick a few different roles for Meryl Streep but the one that stands out the most to me and the one I think she was robbed of an Oscar for was her role in Adaptation.

As for male, I will have to think about that some more. Nothing is immediately coming to mind but I am just drawing a blank right now.

Hasn't got a mention but

Val Kilmer - Tombstone is my all time favorite acting job for a male

Female - Kathy Bates in Misery still haunts me to this day

Male: Robert Hays - Airplane! (or Morgan Freeman - Shawshank Redemption)
Female: Jessica Tandy - Driving Miss Daisy (or Julie Andrews - Mary Poppins)

Limited to movies I've seen. I haven't seen a lot of the great black and white films.

Male
DeNiro in Raging Bull
Jimmy Stewart in Vertigo

Female
I'm not really a fan, but Meryl Streep is such a great actress. I could choose a couple of her performances, but I think I'll choose Out of Africa just above Sophie's Choice.
For my other female, I'm going a little off the path with Hillary Swank in Boys Don't Cry.

Tough choices, but for male, I'm gonna go w/ Christian Bale in American Psycho.

I’m surprised Tom Hardy’s performance in Bronson isn’t getting any love in this thread.

CB in American Psycho was great also.

Overall, it might just be the greatest movie ever made from O'Toole's portrayal of Lawrence along with Shareef, Quinn and Sir Alec Guiness to the cinematography, some of those deep desert scenes were just spectacular.
