Is there a coach or a player who is "unarguably" the GOAT at his job?
I am talking about a guy that even his most bitter rival has to admit is the GOAT.

Not really.
He has 14 majors to Jack's 18, and only one more overall win. Tiger doesn't pass Jack until he wins 19 majors. He's 38 so he definitely has time to do it.

It's debatable depending on the field. Times change so you really have to look at achievement within the context of that time period.
