You are analyzing the numbers from the wrong perspective. He throws it alot less. Of course his YPA will be more. YPA tells you basically nothing in this argument. If Brees' Att/Gm went donw by 10, what do you think would happen to his YPA? They would frickin go up. What does that mean? Absolutely nothing.

his yards are low because his attempts are low, he has one of if not the best (at least most consistently awesome) runningback in football, an elite run blocking line, and no elite wide receivers
his QB rating and yards per attempt (moreso) tell the story

Ummmmmmmmm, his number of attempts wouldnt be so diluted with incompletions. Many times they use the short passing game as the running game. He would play in a more efficient offense like the Seahawks do and would throw much higher percentage throws like the Seahawks do many times off of play action.

the divisional playoff game against Atlanta is a great showcase of how good Russell Wilson is when the seahawks offense starts going pass heavy.

His QB rating and yards per attempt are high, because his attempts are low. If he is asked to throw 35-40 times per game, they won't stay that high. They will regress towards whatever the mean is for a game manager that is suddenly asked to do too much with his arm.

Why don't they use the more efficient approach and throw much higher percentage passes, but just pass more, if it's that simple?

If anything, you'd expect his YPA to be lower with all of the WR/TE screens they run. RW has one of the better deep balls in the league, elite arm strength, great accuracy and plays on an offense built to run the ball.
Kearse, Baldwin, Harvin...who is a #1 receiver on this team?

I'm just presenting the stats for people wanting a clear picture instead of arguing, "You're using the wrong stats!"
This is an opinionated topic that won't go anywhere. People argue Seattle's team is built off that defense and run game, so Wilson is just an above average QB. People will argue that Rodgers' has no defense/run game so he has to ball out to win.
Just some more stats for people:
In the past 3 years, Seattle has allowed 30ppg+ 4 times in 42 games. They have gone 0-4 in those 4 games. 100-124 (-24 net) 25.0ppg-31.0ppg
Wilson's stats in those 4 games:
144 attempts, 1115 yards, 7TDs, 3INTs
Per game stats:
36 attempts, 278.8 yards, 1.75 TDs, 0.75 INTs
In the past 3 years, Green Bay has allowed 30ppg+ 9 times in 34 games. They have gone 1-8 in those 9 games. 278-315 (-37 net) 30.9ppg-35.0ppg
Rodgers' stats in those 9 games:
360 attempts, 2629 yards, 19 TDs, 8 INTs
Per game stats:
40 attempts, 292.1 yards, 2.1TDs, 0.9 INTs
