Billy Cannon?
Not to diminish an amazing career as a Tiger, but his Halloween run against Ole Miss is so historic I'd argue it overshadows the rest of his career.

He's definitely not the typical answer to the OPs question. He won a Heisman, an Collegiate championship, lead the AFL in rushing one year, won 2 AFL championships, and then all the legal issues.
Still think he fits. You mention Billy Cannon to any college football fan and most of them will instantly think of the Halloween run.

Canseco is not known for 1 memorable play either though, that is just his worst one.
