In west texas but gonna have some gumbo, venison boudin, and also got some hogheqd cheese

I’ve eaten deer meat everything since I was born, and I can honestly say I have never had venison boudin. How is it and who makes it??

Heading to a tailgate where there's going to be gumbo, pastalaya and a brisket. I'm burning some coals now grilling some Bourque's sausage and T-Boys boudin.

Palmetto white cornmeal grits and squirrel.

Main Ingredients
2 ? small gray squirrels, freshly shot
1 lb Andouille sausage
2 tsb ? bay leaves
1 ? onion cut in quarters
1 ? carrot large chunk
tsp ? ½ black pepper corns
2 cups ? veal or chicken stock
Grits
1 cup Palmetto stone ground white corn meal
cup ? ¼ white flour
1/4 cup Jim Dandy grits
1/8 tsp ? cayenne pepper
1/8 tsp ? black pepper
1/16 tsp ? white pepper
2 cups heavy cream
1/2 cup whole milk
2 tsp sour cream

Venison is way too lean to make boudin…so it must have something else in it to add some fat/oil. Prolly pork.
So, OP…..is it maybe pork &venison boudin?
