Ive seen it done and its commonplace to form an LLC for tax reasons in situations like this.

The name is the confusing part. Although given how clueless he looks as a HC it actually makes sense.

Nothing to be confused about. An LLC is a Limited Liability Company. It is a partnership, not a corporation. However, it does give the partners the benefit of, yes, limited liabiity.

Anyone signing a deal of that magnitude should create an LLC if allowable. There's nothing to see here.

The contract is binding even if LSU folks never signed it (assuming it went through back and forth revisions to get to this point.)
