It probably has something to do with the voters think ole miss was overrated. That’s why an unranked team was favored against a top 10 team.
Consider- if you put us at #15, they still probably have to drop us out if/when we go to 6-3. It would seem harsh to drop us from that high all the way out, especially if it's respectable. But the record will be the issue.
Conversely, if we win that game, we likely jump to around 11 or so, because then we'd be 'expected' to win out and finish top 6 regular season, top 4 if we win the SEC.

Utah loses to Florida, which we beat convincingly, and their record is only 5-2 and they're ranked higher than LSU.
Can anyone explain the love for UTAH?

If you are a unbeaten top 10 ranked team and you lose to a unranked team you deserve to fall completely out of the rankings.

LSU is clearly a special circumstance this year, for pollsters. 2 decades of dominance and visibility followed by a slump, just hired a known good coach. Loss to Fla St showed we had a ways to go; wins against Miss St and at Auburn showed we're dangerous.
The win at Fla might have been a signal that Vegas thought the recovery was accelerating.
This win over Ole Miss is probably confirmation of that.
