There was an article somewhere just a few weeks ago about LSU allowing other (local?) vendors in the stadium this season. Seems they’re trying to do SOMETHING.
But, really, with all the great food around campus during tailgating, I’m pretty sure anything you get in the stadium will be a disappointment.

I’m not aware of any public universities with full time staff dedicated to concessions. I don’t think AD’s want any part of that. I agree that would likely increase quality, but would probably eliminate profitability.

hey woodward !! Louisiana is the jambalaya and gunbo capital of the world among other foods-- dont tell me that it cant be done every year it is done at the Jazz Fest crawfish monica etc etc

That is an absurd degree of cost sharing to anyone familiar with the business side of food service.
Gross shouldn’t be higher than 30.
The only reason why they are making any money at all is because of the captive customers, and even then you are missing out on folks who hold back and not buy at all because the cost/quality ratio is so poor.

Lease each space to a reputable vendor. Figure out how much you're making with the Aramak deal and divide it by the number of spaces you have. If you can't get that sum by leasing each space then you'll have to see what profit sharing you can to make up the difference.
That's pretty simple math to do. Also LSU has the numbers and plenty of business folk to develop a business plan. The options are there to try.

Same shite that EBR students have put up with for a decade. Everyone complained, so they switched to HES, who promptly cut pay and personnel. My school went from three full time custodians to one. He is an old man who was willing to work for the lower pay, but can't actually keep up with the school's needs.
Aramark also has vendor contracts throughout the national park system. The quality of their service is universally poor.

I haven't been able to make a game in TS since 2019 so my comments are probably dated.
Why in the world do you want to bother with screwing around getting something decent to eat inside the stadium.
Is Jambalaya by Shake still in business with a trailer on the plaza between TS and PMAC? Between them, or hitting up a good tailgate, or even at the PMAC TAF parties, there is plenty to eat before the game that is a hell of a lot better than anything in the stadium.
Once I get in the stadium I ain't screwing around with standing in line for that crap they got. I came to the stadium to watch a game, not eat.
All I need is a supply of cold fluid intake - cold water and/or a Coke or Sprite. I send one of my kids or get one of the kids who are always getting up and down in my section to bring me back a bottle of water. Thats all you need baw.

I’m not defending Aramark, but there are incentives for Aramark. The more they sell, the more they can make.
Good burgers sell better than poor burgers. Shorter lines, better service equals more sales. Cold beer sells better than hot beer.
If their fare is crap, they make less money. Fans vote with their wallets.
