One thanksgiving weekend at a camp in Texas, I made a huge pot of chicken/ sausage gumbo. We Had also brought T’giving leftovers, including my wife’s greatest cornbread dressing ever.
We ran out of rice for the gumbo Saturday night. My friend poured the gumbo over a couple scoops of that dressing and it was out of this world good. No gumbo or dressing left that night.

I never had nor will try tater salad in gumbo however. Now a sweet potato in Chicken/sausage gumbo with an egg cooked in it is great.

You put potato salad in MY seafood gumbo... you are never getting any more from me.

Okra and tomatoes in my gumbo? HELL YES. And plenty of them. The trick is to purée the hell out of them first. It makes the gumbo base thicker.

I can’t tell you how many people over the years have told me, “This is the best gumbo I have ever eaten, and I love the fact that you don’t put okra in it.” LOL

Well this is good to hear because I lived in SE LA for 30 years total. I'm like I've never heard of potato salad in gumbo...am I crazy...where have i been?

But I'm trying it next time we make it.

Whenever I make Jambalaya or Gumbo, Americans and other travelers freak out!

Gumbo needs to have okra, imo.

I didn't grow up with tater salad in my gumbo, and don't plan to change now.

I never heard of it either but Dandy Don validated it's use in gumbo this morning in his recipe section

Grew up in the AP. Always had potato salad as a side to gumbo.


For those of you who are putting it IN gumbo - are you still putting rice in the gumbo as well?

If you’re talking about gumbo, no one in the Terrebonne/Lafourche are cooks their gumbo with tomatoes. If you’re talking about a separate dish, then yes. But putting tomatoes in gumbo is a big no-no.

Also, okra and shrimp in gumbo is definitely a thing down here, too, as is potato salad. I’ve had them my entire life.

Yes. Definitely. The way I fix mine, the potato salad isn’t completely submerged.
