Whats the going monthly rate for those fiber service providers? I'm in St George.
Just had AT&T fiber installed for 49/month. 1G up, 1G down. Night and day better than Cox, for a third of what I had been paying them. Got 49/month for 12 months. I'm sure it will creep up after that but with additional providers starting to enter neighborhoods, but I can see that being a standard price beyond the 12 month period.

I got ATT gig fiber right when it got to BR like 8 or 9 years go. I was able to keep 50 bucks a month for a few years then they stopped reducing it. its not like 89. Tmoble fiber pamphlet show gig for 49 and 2 gig for 70.

Let me give them a call
"Tank you callin eighty tee. Dis John, help you?"
I got ATT fiber years ago back when it was called UVerse. At least twice a year I have to fight with them to bring my bill back down. Last fight was 2 months ago, and they basically said there was nothing they could do for me. I'm seriously thinking about getting rid of UVerse and just using their internet. But I haven't had the time lately to investigate what to replace it with. I refuse to go back to Cox (unless someone tells me they've gotten much better since being bought out.)

You will be at $89 plus a month next cycle.
I’m all ears, been meaning to shop around. Currently with ATT and have TMobile, REV and a couple other fiber options

Rev > ATT > T-Mobile
Rev is local plus doesn't require their equipment. They install an ent outside then run an Ethernet cable to your router.
ATT need their equipment inside that has to be out in bypass mode if you want to use your own router.
TMobile is same as att, except if setting up services at home like a VPN a bit more challenging. If you don't self host anything probably toss up between ATT and TMobile.

I’m paying $65/month for their 500/500 plan. Which is fine. They have me pretty cheap on my cell phone bill too right now around $60.

Recently got them down to 45 from 65 for the 300 option.
Ask to speak to the customer loyalty department. State that you have cheaper options and they need to lower your bill or you will cancel.
They will throw some different options at you for about the same price. More speed or cell phone bundle. Some were tempting.
Do no fold. If it comes to canceling the service, schedule a cancellation date a couple of weeks out so you can cancel the cancellation if they don’t fold.

Spectrum doesn't even sugar coat it...it's the customer retention department.
But yeah, if you go the route you describe it has worked for me in the past.
