If Beer isn't down, I'll take that.

Hire a licensed and insured baw. You're already gonna need a backhoe and all that, so just hire an electrician while you're at it.
I’m digging the trench by hand myself

If the soil is without rocks and not too hard, a bill dookie is great for digging a narrow ditch about 16" deep. Just don't try and take all 16" at once.

Go 18” deep. Cover with about 5 inches of backfill. Run a caution streamer the length of the trench, backfill all the way. The next person/tradesman who starts digging around your property (or future owner) will thank you and probably not hit the line.

In the same boat. I have my 220 main panel that feeds my sub panel, ac, and dryer. I have open lug there that I plan to use to run a 220 to my shed so I can run a little 220 welding machine. I'll feed that to a sub panel to run my lights outlets and a mini split. Currently I have an extention cord that powers it. I run my table saw and lights with no issues but I want to expand.

FYI- Running multiple circuits of the same voltage to another building violates NEC. Put in a sub panel.
