Question about back porch TV mount

We moved into a home 3 years ago, and the previous owner left the mount plate on the back porch brick wall. It's slightly off-level (the bubble on the leveler is not perfectly in the middle).
Can I untighten the bolts in the brick to adjust the plate slightly, or will that diminish the anchor strength when I tighten it again?
Also, I'm looking at a 70" TV for essentially a 10'x10' brick wall and about 11 feet viewing distance. Should I go bigger?

Many tv mounts have adjusters to make it level if the plate is not exactly turned level.

set something like a spacer on the bracket of whichever side needs to be heightened (where the bracket hooks over the mount bar). Wrap tape around it, any kind of rig would do.
PS - I would avoid loosening anything in the brick if at all possible.

Something else to consider. Is the level that you used accurate? I had one once that was slightly off. All you have to do to check is turn it end for end and recheck. If the bubble is the same then your level is good.
