I tried a crock pot creamy chicken pasta recipe of his a few weeks ago. It was pretty damn good. I used half of it for 5 lunches and froze the other half. This week I did his korean beef bowls with some ground venison.

i switch up from week to week but my easiest go to is to make all in bulk
basmati rice: standard cook
pinto beans from can: i simmer with jalapenos, onions, garlic, seasoning and then mash it after it cooks to get a refried bean consistency
ground meat: i grind my own, if this is something youre gonna be doing i suggest getting a grinder. you can make you own blend and you will save ton money. depending if im bulking or cutting depends on my mix. something like 70% chicken breast 30 % fattier cut like pork chop would be common for me. cook on stove top with favorite "taco" like seasonings. one cool trick is if you want that very fine taco meat texture, while its cooking on the stove top, mash the meat with a potato masher until its comes out the texture you want.
those three units can combine into microwave container for the day. do your macros to your desired amounts. 1500 grams rice, 100 grams beans,
4 oz meat is usual for me for a lunch.
make batch of pico to pack in separate container to add after heating the rice/bean/meat.
I also generally pack a little spinach type salad with veggies.
this is super simple, can be made in bulk, and can even be portioned into little sandwhich bags and frozen for next week.

The thing that re-heats the best I've found is taco bowls.
Rice, lean ground beef cooked with a taco seasoning, pico, taco sauce, black beans and/or corn if you have the calories

I basically eat chicken tenderloins (baked) and mashed sweet potatoes for lunch every day. I usually add a green vegetable, but those rotate.
Boring, monotonous food has never bothered me.
