I've done atkins before, is the main change here that more fats are in and less protein is required?
Would the following be ok for a Keto diet, if not what's it missing.
Breakfast: 2 eggs/jalapenos
Lunch: sliced ham or beef, spinach, carrots, cucumbers, cheese
Dinner: Chicken breast, with sauteed mushrooms and other assorted non-starch (ie corn/bean/potato) veggies.

Not bad. I’d probably drop the carrots but that’s it. I find whatever is easiest to you on meal prep leads to success.

I’m curious about fiber intake. Looking at your typical day in the OP, it looks like there’s maybe 1g of fiber/day. How’s the pooping? Any concerns about fiber intake and colon and GI health?

I think my goals are relatively modest. Trying to lose 15-20 lbs that have accumulated over the years by mid-may (12 weeks) or so. That should knock an inch or so back off the waistline.
The other goal is really just doing a better job of watching what I eat overall. I doubt I will be a lifetime keto-er (as I like beer too much) but can certainly reduce a lot more crap from my diet and just this start has helped.
5 lbs off so far this week. (Granted I also run/walk 3-5 miles per day, and the no beer has also helped tremendously).

When you eat Keto you aren’t eating all the processed junk that requires you eat fiber to help digest / remove it. 95% (I made that figure up but it’s a lot) of the food you eat on Keto is directly absorbed and it is completely unnecessary to eat fiber.

Okay with that. Download carb manager and set your macros for 75% fat, 20% protein, and 5% carbs. Do not eat more than 5g of net carbs a day. Also on the app put yourself into whatever amount of a deficit you feel comfortable with. Start off easy.
Do not eat chicken. It’s too lean. Eat red meat instead.
Do not eat carrots or any vegetables for that matter they have carbs.
If you do ingest carbs outside of eggs or if you feel you “need” vegetables limit it to a vegetable like asparagus.
If you want to lose weight this is the way.

I can attest to this. I’ve had digestive irregularities my entire life. I got a little nervous after not eliminating waste in a few days. I did a cleanse. I eliminated everything, but there just wasn’t much there. It’s definitely something to get used to.
Also, a teaspoon of coconut oil in your coffee will help. Drink that keto aid in the OP, and you WILL go!

Update on my Keto journey:
I have lost a ton of weight, about 40 pounds worth going from 200 to the 160's. My goal weight was 165. Well as of this morning I am even lower than that sitting at 164.4 pounds!!!!!! I bought new clothes but even the new clothes are floating on me. I have set a new goal weight of 160 pounds which I think will be my lowest weight I'll try to be at. Once I hit that, I'll start going into maintenance mode including introducing a couple of healthy/complex carbs back into the diet.
Good luck to everyone else on this journey!!

Awesome great work!
If you want to eat carbs I would suggest a CKD diet. Essentially once a week eat those complex carbs you spoke about but the other 6 days eat normal Keto.

Wife and I started Keto the day after thanksgiving 2017 so 2.5 - 3 months. Went from a size 40 waist to around size 31 waist. Goal was to shock my doctor by the time my annual checkup comes around end of this month.

I started Jan 10, 18. I'm 5'9 and was working out and seeing no progress. I was 148 pounds and even though that sounds good I didn't like my body comp. I was working out but thought I was skinny fat. Since I started keto I am now 136 and seeing definition. I haven't eaten at a restaurant in 2 weeks. I can see definition and now I can't wait to get in the gym to work out. It's all about planning your meals in advance. More energy, less bloated feeling.
I love beer and haven't missed it. I replaced beer with vodka and water. I drink less and pants don't fit but shirts hang better. Didn't think I could find this success at my age (48).

It works. Early January 241#, 40+" waist. Yesterday morning 225#, 37" waist. 5 weeks or so. Doing IF also.
Broke the booze habit, now just a bourbon or 2 on Friday and Saturday nights.
Basically living off water and that damn bacon/egg/cheeseburger casserole. I want to change that part but if its working why change it?
