It sounds like you’re on the Atkins diet and have reached the ketosis phase. It does make you feel better and certain aspects of your health better. But long-term? All the protein intake day after day doesn’t seem good for the kidneys. And a gallon of water? Water is good, but hopefully your body is hanging on to enough electrolytes.
Btw, there’s no such labeling as “baby aspirin”; It was never meant for babies to take. Maybe children a long time ago? But know what you mean, 81mg.

My mother has been on it for a year at least, strict. She no longer takes anything for her sugar, stomach issues have gotten better, not completely, but better. Also she doesn’t look like absolute shite, weak, old, etc. if she exercised at all, it would be all the better, but nerve problems keep her from that.

Also, her doctor said “you can’t argue with results “. She’s a lesson in taking care of your body now vs later. Overweight, smoker, with sugar out of control is a sure way to die.

No! You are healing yourself through diet. Beef, when eaten head to hoof, has all of your macros and micros that you need, minus a few that you can get with Celtic or Redmond real salt.

I'd be concerned about the daily aspirin though. Might want to ween yourself off those when you feel comforting doing so.

You don't need fiber on a carnivore diet. Your body uses almost 100% of the animal products that you consume.

Read the book, fiber menace, it might teach you a few things.

Doctors get very little education regarding nutrition. Nutrition science and the govt guidelines are both dysfunctional. Med school needs to go to 6 years.

It isn't a low carb diet. It's a zero carb diet.

I heard the horror stories about constipation or diarrhea the first couple weeks, but my experience has been the opposite. I'm more regular now than I was before.

Congratulations on your progress. I’m a big fan of eggs, meat and cheese, real butter. Lots of nutrition there, protein, B-12, omega 3, iron, K2, zinc, selenium.

I don’t believe LDL is the boogie man we have been led to believe. I think insulin and triglycerides are more destructive. Not to mention seed oils. Glad to hear you are on a healthier path!

Your body is going to have a 15 to 30 day adjustment on ANY elimination diet. When your body is used to a diet high in processed foods - especially carbohydrates and sugars it’s going to go through an adjustment phase.
There are several elimination type diets out there I encourage people to try a few and see what works for them. There’s no right or wrong answer as we are all different. The example I like to give is Deca Durabolin worked great for my training partner at 400 to 600 mg a week. It did diddly shite for me. I tried just about every single human grade version there was at low and ridiculously high doses and I got nothing from it. It’s the same with diet and training. There is no one size fits all. The only way to find out is to experiment and see what works best for you. Anything is better than eating a highly processed seed oil laden diet.

I think people who operate at the extremes, like addicts, tend to find success with all/nothing approaches to things. IOW Heavy restriction will likely work well for someone who has trouble with moderation. I’m wired much the same way so I get it.
