If you are going to fry food, what's the healthiest way?

I've read where heating up oils releases a lot of free radicals and overall is much more unhealthy once heated up. I've seen where frying in lard is technically the way to go as far as less dangerous on heart health. Only issue with lard is they recommend non-hydrogenated lard which is hard to find.

Coconut oil man seems so split on if healthy or not. I realize much of these oils, vegetable oil, peanut oil, etc may not be bad, but once they get heated up apparently are where they cause problems.

Lets just say simple fried chicken or fish. Would you say bacon grease, non-hydrogenated lard, coconut oil, or is it all the same once you start frying with it? Or any other type of oil maybe, avocado oil?

I use to eat fried food 3-4 times a week, green tomatoes, catfish, perch, chicken, pork chops. Now I limit myself to twice a month, I really love fried food. But if there's potentially a healthier way to eat it, I'd like to give it a try. Thanks

I'll add, I understand oil free fryers, just not a fan of them.

The answers youre gonna get are going to have an asterisk. There is so much literature you can bury yourself in and come up even more confused.

From what I can tell, animal fat below the smoke point is about as good as it’s going to get.

Well you look at the smoke point. Also you want saturated fat for high heat. The actual real Okinawan diet is high in pig fat. But they also eat a lot of fermented food too.

Vegetable oil, canola oil, etc are horrible for you regardless. Lots of tran fats in super processed oils. Canola oil is used for industrial lubricant.

I don’t think it makes a big difference on longevity or quality of life if you eat it a couple times a month.

I've always fried meat in peanut oil, and vegetables in vegetable oil. I agree with everything you say.

I appreciate all the responses and if more later I thank ya'll. It's so hard to know what's correct or believable and maybe nobody truly knows. I agree frying maybe a couple times a month isn't bad but I'm getting older and would like to make it as healthy as possible. I understand no fried foods is the best, I have weaknesses. I quit smoking and drinking 25 years ago, I have crutches and fried food is it. Since January I haven't gone over twice a month though, I'm happy to keep it at that. I do run twice a week, well jog, and do pushups and situps 3 times a week. I average one of those Mexican cokes maybe once every 2 months, very little sugar or desserts, processed food. I drink black coffee in morning and water throughout the day.

I eat really clean. Meal prep everything- weigh everything.

Every so often, on the weekends, if I want fried chicken…we’ll fry chicken. In a 5 gallon outside fryer with peanut oil and a shitpot of French Fries.

Everything in moderation. You’ll go nuts otherwise.

I eat fried food when I don’t plan to eat healthy. Like for my birthday or whatever. Eating fried food every now and then won’t kill you. I find it easier to just limit consumption than constantly stress over which oil or which method of frying is healthier, blah, blah. I might have fried food maybe twice per year.

If you really like the crunchy texture and you want to eat it regularly, look into panko crumbs and bake it in the oven. Using crumbs and baking it easier will be a healthier version than deep frying in oil.

And honestly i dont know why anyone wouldnt. I do naked wings in them every week. Much easier than the fricking oven.

For oil, tallow is probably your safest bet. You should just render it yourself, though with beef prices the way they are it’s getting expensive.

For the “breading” I have no clue. I’ve tried a couple of variations that never work.
