I’d love to but I’m scared

I haven't cut it out completely but I've cut down on its substantially. I have a tendency to get very hooked on it and wind up drinking 5 or 600 mg of caffeine in the morning. I haven't seen anything in literature that stops people from losing weight when they take in too much caffeine, but my dietitian says it does because of cortisol and blah blah blah... all I know is I haven't lost weight in over a month despite my best efforts, but I cut back to one cup in the morning and a week later I'm down five pounds. And this is the second round of this happening while working with this dietitian.
my only thought is maybe it affects me differently because of my hashimoto's.
As for energy, obviously I feel less in the morning but I feel better in the evening. I think sleep is about the same because I never really had caffeine past 2:00 p.m. anyway

Scared?
If you cut out coffee you'll go through about 2-3 days of caffeine headaches and irritability and ~4 more days of said irritability. After about a week all of this subsides and you'll feel better.
It's not heroin. It's a headache a bad mood for a while.

I quit soft drinks 10 years ago, one of the best decisions I ever made.
I still have 1 cup of coffee in the morning, and an unsweetened tea every once in a while; but nothing like when I was drinking diet cokes all day long.
ETA: I drink almost two gallons of water a day now. Never felt better!

I am always fascinated by people that train and don't have any of the major side effects or take contraindicated meds giving up caffeine. It is one of the best legal PEDs around with positive mental and physical benefits.
It has been proven safe up to roughly 400mg a day and increases physical performance 3-5% if properly dosed. I bet there was 60,000mg ingested during today's stage of the Tour de France by all the riders combined.
I know people that gave up caffeine and turned around and replaced it with "energy supplements" with ingredients that haven't had 1% of the testing done on the effects of caffeine. Properly used (like paying attention to the half-life and bedtime) it is a freakin miracle drug for 90% of the population.

You have hashimotos? I just started dating a girl that has it. What do you do to maintain/regulate yourself?

I do. It's uncommon in men but autoimmune issues are rampant in my family.
It's generally pretty well regulated at this point, but I have flare-ups now and again, usually induced by too much stress. For example we're buying a new house and selling ours, and with all of extra duties and shite to get ours ready, managing a toddler, a FT job, CrossFit, etc. I had a flare-up yesterday and was knocked on my arse all afternoon. So stress management is a big key once she's medicated and generally feeling better.
Honestly just medication and time. I'm up to 250mcg of levothyroxine, which is synthetic t4. It has taken years to get stable though.
And sometimes weight management is still more difficult than I think it should be. For example, I go on a weeks vacation and can put on 7 real (as in after 2 weeks and bloat as cleared) pounds easily.
Some people swear by getting off of gluten, and there actually some solid logic to it, but I haven't had to.

Doing it now. Slightly dragging but I got tired of withdrawal headaches if I went a day without caffeine

I started drinking lots of coffee nearly 30 years ago and only during my chemo treatments for like 4 days following treatment have I ever gone without it. I'm not sure if I'd get headaches or not. I felt so shitty after chemo that I couldn't tell the difference. I drink only organic, 99% black. Occasional bulletproof. Don't see the point in quitting. It doesn't f w my sleep if I cut it off before late afternoon.
