For those of you that make beef jerky - Spicy Recipe

Lean Meat
1.5 lb Eye of round or Top/Bottom Round
Marinade
1 tbsp lemon juice
1/4 cup of soy sauce
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp cracked black pepper
1/4 tsp of sesame oil
2 tsp of red pepper flakes
1 whole habanero 2 if extra hot is wanted
2 tbsp Worcestershire sauce
1/4 cup cold water
1/4 tsp curing salt - Optional (but helps preserve)
2 Tbsp of Honey - Optional

love making jerky as a high protein snack. fyi, Walmart has bottom round sliced thin that might be labeled "stir fry" that works really well

I usually get mine from Sam's.
It was 7.27 a pound last week for bottom round. Bought 8.91 lbs. Trimmed it to 7.82 lbs. Made 4lb 6 oz of jerky. So, with ingredients about a dollar an ounce. Not really cheaper than some you can buy, but really good quality and amazing flavor.

Most important is to cut against the grain. I love making jerky. I just do it in the oven. put it on warm, leave oven door open, let it do it's thing for several hours.

My uncle had one of the old 5 or 6 tray food dehydrators that he made it in. The little cheap countertop version. He mostly made it out of venison, but would mix in some beef every now and then.

I've also come up with this axiom on beef jerky:
If you don't have a food dehydrator, you don't spend any money on beef jerky because it's too expensive!
If you DO have a food dehydrator, you spend way too much money on beef jerky because it's so good!!!

I do mine in an electric smoker with pellets. 120 degrees and smoke for at least 4 hours. I also put a battery fan blowing a light breeze through it. Then when it gets close to done I check it about every 30 minutes and pull pieces off as they finish, rotate trays, pieces, etc and load more as a tray empties. Vac seal and put it in the fridge. I make a lot of it at once.
Its a process, not hard, just time consuming. But its really good, lol!
You can do it in an oven, but hard to keep the temp down and it dry. Dehydrator works well of course.
Smoke adds that extra flavor though and goes great with the habanero flavor.

I vac seal it tight and store it in the fridge. Ive had it last 6 months with no issue before I ate it all. My guess it will last a year minimum.

I do it in the convection oven (I do too much to fit in the air fryer), convection roast setting (fan always on) at 170 degrees. It works great. Still takes a few hours.
