Do you take rest days?

I rarely take a rest day. Maybe once every 2 weeks. I pretty much have to since my diet is not strict.

5 days on, 2 days "off." Off days are usually a jog around the lakes or going to play intramurals or going for a jog or something. I try to do something active at least once a day if I'm not lifting.

3 days hard at the gym, about 2 days a week doing bodyweight, mobility, and GPP stuff at home. Walk everyday with the dogs and family.
Sometimes I'll skip the home workouts if the baby isn't letting me sleep much or I'm just tired.

Mondays are for rest. Every fourth week is scaled back too. My basis is cycling not weights, tho.

I started tracking my workout days a few years ago. I usually average between 15-20 days of exercise per month. About half of those days are fairly intense.

Working out tears muscle down, rest re-builds it larger than before. If all you do is workout and not rest, all you do is tear muscle down.

5-6 days on 1-2 days off depending on whats going on but that's the normal routine.

Are you suggesting take a full day of rest to recover in between every workout, twice a week or possibly more?
My workouts target one major muscle group each day with time in between the next workout of that same main muscle group coming after about 6-7 days. Such duration in between workouts will typically have me lifting close to 25 days out of the month.
I take BCAAs during every work out, creatine after and plenty of whole foods to keep my body fueled up. The reason I mention this is because I feel great in terms of energy, and fatigue isn't really the issue, nor is recovery (good sleeper I suppose), but my gains have been incrementally slowing down to the point where it feels more like maintenance than improvement. Does that have something to do with the volume of workouts I'm doing, and would adding more days off to recover increase the rate of improvement?

This. The muscle must rebuild. In addition, as you age “working through the soreness” becomes counter productive to outright injury causing.
When I was a total gym rat it was 2 rest days.

Same...I eat like shite and don't really concern myself with what my body needs(I'm a picky eater)..it's the soreness/aches at 36 that will make me rethink my fitness obligation
