Be honest...did you say wtf when the mimic chest in sens fortress attacke you? 
All it takes is one time and you will attack every chest from that point on just to be safe

I was checking every chest in sens, from reading comments here
I do enjoy the lightning spear it gave me. That and the stamina regen shield.
so many armor sets I dont know what to +. I gotta stay under 50% equip load...gotten pretty good at dodging

Dodging is for cowards, I use my shield and soak up the damage

I do plenty of that too. Mainly use the dodges for bosses and sub bosses. Much easier to just block and stagger trash mobs, I agree.
some things just dont need to be tanked though..like gargoyles and sentinels.

Grass crest shield? Love it. I use it strictly every play thru. Grass crest shield +6

So I ran into two NPCs but at the time didn't really wanna deal with them. After going back to them so I can purchase and sell items they are gone. Do they keep moving around or is there something you need to do to have them be in that spot?

Assuming you mean a certain merchant in the area with a water vessel and a bell then he does disappear permanently from what I read.

Have the four old souls. I'm going to spend some time upgrading weapons and unlocking the NPCs, then on to the castle! But for now it's back to real life...
