I've seen a lot of people admit to beating him this way. I wanted the Uchi bad so I literally went to attempt to do that, and I ended up beating him legit. I had a fire sellsword twinblades +1. He wrecked me before a few times. I went to cheese him and ended up beating him. I might have been dealing more damage after leveling dex up a bit and he may have been weak to fire with his shitty naked armor.

I was a deprived build with literally no armor at that point... Was not about to try to fight him straight up

All I did was kite him, watch him slowly approach, and leap attack. Rinse and repeat, and rest in peace.

What is wrong with admitting that? Part of the souls gameplay IMO. Nothing cheese about it.
Edit: I have been knocking people off ledges for 4 games now.

This helps a lot...thanks!
ETA:
I watched a little but that is farther than I am so I will try it out and report back.
This is pretty much what I was wanting to know.

So another dumb question here... I'm still early in the game and have messed around with the pyromancer, warrior, and assassin -- but at least so far, the play styles are pretty similar.
Mainly, most combats are dodge/dodge/time an attack/attack from behind, then repeat (depending on the various attacks you face).
The assassin and pyromancer do have a bit of range, which helps when things transform but my basic combat style remains the same.
Do the classes differentiate later? or am I just doing things a bit wrong?

Classes really don't matter at all. You can meld it into whatever you want as you progress.

The play styles are all the same outside of going the magic, physical, combo of both route. Picking a class just changes what your starting stats are, which you can completely change as you level up and when you get the chance to reset. You don't get special moves/abilities based on your class.
For example, a warrior will be high on strength/vigor while a sorcerer starts with higher intelligence/faith, but you can level up any of those stats at any time. So if you choose to start as a knight, then you may be at a little disadvantage if you later want to become more magic focused. At the same time there are classes that start with both magic/physical stats so you can do both. What you do after is up to you though.
With that said though, you start with armor and a weapon based on what you pick.

I'm hearing really good things about the Dark Sword. Might respec, ditch the high dex and just go all faith, and infuse the Dark Sword with a blessed gem. Supposedly it's quite amazing.
I was having a lot of trouble with the Abyss watchers using my +3 bastard sword, it was just too slow against them. Tried out some other weapons and really liked the dark sword. As a strength build it scales decent with strength so I used the heavy gem, B scaling now, and got it to +3. Killed Abyss watchers no problem 1st try. Probably not the best path for the dark sword but its great so far.

I have a quality build and have been meaning to try the dark sword out. Wish I had saved some chunks for NG+.

The moveset is great, and as stated before, when upgraded it gets fantastic scaling.

at least it wasn't a rough end like the choir... holy cow, it was down to the last second (and the weapon change during the middle of it!)

The tension was palpable.

So the bonfire path from the chapel, through the Cathedral of the Deep, back to the chapel?
Yea...frick that level!!
Immortal undead, thieves, fire arrows, fire kamikazes, skinny bridges, and those fast assholes dual wielding some type of curved blade.

It's not so bad! I've got that level memorized now after doing it (and dying), and sunbroing so many times. Pretty much spent a whole day on it.

Lol, I memorized that place now. First playthrough that area, after every turn: where the frick is the bonfire?
Throw your summon sign down and help some people, you'll get the hang of the area.
