I don't know what a Paragon is at this point but I have none. What do they do?
The first 50 paragons pretty much fly by, but after about 200 it gets really slow. It's a methodical grind but at that point in the game it's all about legendary farming.

Should I be salvaging stuff or selling it? The gem lady and the weapon/armor dude seem to confuse me. I don't really know what they do or why I should be using them.

Friendly suggestion for you then:
Look up a cheap starter build on the forums before you get too heavily invested in your character. Just find a build that seems like fun that does not require some rare uniques. Budget builds is what they are usually called.
You can try to build your own character if you want, but the there is a strong likelihood that you are going to be crippled come endgame.
I might suggest a winter orb elementalist build. Can be done cheap and you can clear much of the endgame content. Still, watch a vid or two to see if you would enjoy the playstyle.

I pulled it down and played some last night. Fun game so far, and one hell of an intricate skill system to say the least. Reminds me of a mix between D3 and Torchlight 2, but much more robust.
ETA: I miss having the pet that can go sell loot in Torchlight 2. You have such a limited inventory so I'm constantly selling in PoE right now. I know that will change as I build up my resources and can be more selective, but right now it's just annoying.

It's difficult when you're getting started and you'd rather sell drops for gold, but gold comes more easily as you progress. Salvage parts help you upgrade and use the cube for special purposes. The earlier you start salvaging, the easier it will be to have all the extra salvage parts when you need them- and believe me, you will burn through them faster than you can get them even when you have stockpiles in the thousands.
I've always wished they'd patch in something to let players convert gold to other items or consumables, because I've literally got 24 billion gold

It's okay but not even comparable to what Diablo 2 was. I played that game for seven years. Though I didn't like the expansion so I stayed on classic(only used expansion to expand my screen size on classic).
Only games that came close to my love of Diablo 2 were Starcraft, Skyrim, and Red Dead.

Was here to plug PoE instead of D3. D3 felt a little too shallow and arcade-ish for me to really be satisfied with it, but path of exile is just fricking awesome especially for console. I have to literally go back to Diablo on PS1 to get an experience that matches it.

I'm not ok with having to go through the entire game again to get back to paragon to complete the season. I didn't finish last season because of the time when I bought the game. Probably right in the middle of a season
