That's something you have to determine as you go. I always leveled up ASAP bc I HATE acquiring a nice chunk of souls an falling off a cliff or something dumb. But you need souls to upgrade equipment , buy equipment, level up, pretty much everything. If I didn't have something specific I needed to use the souls on, I'd level up before going to an area I didn't know. Just have a plan. Tank? Pyro? Mage? Invest your souls according to the type build you want. I made the mistake of building "balanced" character.

Unless its just sitting in your counter if its there I'd reverse for increase souls/finding rare items and kindling flames.
If its the ones in your inventory then save them.

to answer your humanity question, i try and stay human whenever possible. even if playing offline, when you're a human, you can get invaded by NPC phantoms that have good gear, and when you're human, you can summon npcs to help with boss fights. once you start humanity farming later in the game, you will stay human too
i roll around with 99 humanity on the reg
