I haven't done it yet, so I dunno how painful it would be, but I think I can swap maps on the server and upload a map made in single player

Don't worry about it. It's just a primarily water map with under water mountains. I have undewater glass tunnels and an underwater house connecting to tons of minning tunnels.

Yea, first map I have had like this. I made my underwater house 4 stories of glass. It's pretty sweet.

When... uh... some guy I know tried to build a lava pit under someone who was afk, he found it impossible to drop a lava spring. In fact trying to do so repeatedly may have caused this unnamed, yet extremely handsome fellow to disconnect. Is that still the case?
Also, how do you input commands (like chat etc) for the mod the server is using?

Instead you moved one mountain over
Tom, lava/water springs are currently bugged in SMP. It doesn't update on the server, so you place it and it just disappears. The disconnect may have been coincidental, or an anti-spam thing if you just repeatedly did it.
Hit T to open the command line to chat and such. /help will bring up your options.

I got on at alike noon today no one was on. Can I just start building wherever I want? I saw a nice hill right next to the spawn point. Are people just putting a wood sign out front saying who's place it is?

I am building a castle right by the spawn, but my internet is acting up so it may take me a while to finish it.

Long as it's not on top of someone, shouldn't be a problem. I'd give a good space between where you build and where someone else is to give them the possibility of expanding as well, but that's just my own personal rule I try to follow.
