No. Order what you like. I don't care. But for me, if your beer list is the who's who of light beers, it tells me that's not the only place you're willing to cut corners.

Don't be an a-hole to the server.
Expect people to have bad manners and try to not let it piss me off

The ones worth a damn have figured out that there's more to beer than shitty light lagers.
Except the ones that concentrate on their wine program, where they can make more money and contribute to a better dining experience.

If they can't have a handful of carefully selected craft beers on hand, I don't need to eat there.
Wine doesn't contribute to a better dining experience for me.
A nice example of a place that does both well is Mansur's.

Can't argue that is sometimes the case. But heck, it's like family. You get to know everyone's quirks and personalities and have fun with it.
Based on this one post, you don't sound like a barrel of fun yourself.

I don't see that situation the same way. I suspect beer doesn't have the same level of demand as wine or cocktails at most fine dining restaurants. That's on top of not being able to be marked up at the same rates. It's not laziness, it's business.

If the food menu is more than 3 pages, odds are that I won't like the place.

You don't. You make a mignonette instead.

I do this at some places.
BBQ places. Pulled pork sandwich.
TexMex-cheese enchiladas
I am a sucker for cole slaw and I am somewhat committed to trying it anywhere I go.

If the restaurant has a gun library or selection of baseball bats on display, skip it.

If the chef isn't fat I won't eat there.

When did casual seafood shacks start leaving shallots and vinegar on the table?

Do you have an example of this? I have to admit, I'm more of a cocktail and wine person to begin with, so I will usually be ordering those anyway, but I can't really think of a place that would have a well procured wine and cocktail list and not have at least a couple of decent beers.

I'm not saying you need to have 30 taps or a huge bottle selection. But if your beer list is Bud Light, Miller Lite, Coors Light, Michelob Ultra, and Heineken, you're doing yourselves and your patrons a disservice. You can certainly mark up most craft beers at a higher rate than the domestics. I'll drink a few bottles of Canebrake at $5 per versus just sticking to water if you have nothing but BMC. It adds up.
