Green Chile and Beans.

Frozen tub of Bueno green chile ($2.99 in TX.)
1 lb. ground beef.
1 can peeled, whole tomatoes.
1 can pinto beans.
Shredded colby-jack cheese.
Salt, pepper, garlic powder, onion powder to taste.

Brown and season meat. Add everything but beans and cheese.

Let simmer for at least an hour.

Serve up over beans with cheese on the top and a hot tortilla.

Cheap New Mexican comfort food. Tastes better the next day.

Short & Warm

My Grandma told me she used to make this for the hobos back in the day. We also had it growing up:

Make a light brown roux, add water, salt & pepper. Throw in diced potatoes and a pack of hot dogs cut into bite sized pieces. Let cook until potatoes are tender, add can of green peas. Serve with french bread to sop up gravy.

a little homemade hamburger helper... some generic mac & cheese, cheap ground beef... cook the beef in a skillet with some seasoning, add to the mac & cheese... can't go wrong.

This is good with pasta too. Especially if you keep the eggs runny and just mix it all up.

lb gr. meat
taco seasoning
rice
onions,bell pepper, garlic
cheese

grill the onions, BP and garlic
brown the meat
mix it all and add uncooked rice and taco seasoning and season however else you would like. Occasionally will throw in rotel. Add water just enough to cover the mix about an inch. Heat to boil then simmer 15 minutes on med heat. When done, add cheese, sour cream, green onions. And enjoy
