In no particular order I'll say

Charbroiled Oysters at Mansur's - Yes. They're better than Drago's. Shut up. Close second might be the charbroiled oysters at Christiano's in Houma

Oyster and artichoke bread pudding with bacon cream sauce at Mondo

Oyster absinthe dome at Commander's

Oyster clay pot stew at little chinatown

Buffalo Oysters at the Munch factory

Oysters bienville - multiple locations

Still haven't tried the notorious dish at Mosca's

Please keep in mind this is based on my relative inexperience. I'm looking for your suggestions as much as I'm looking to offer up some of my own.

Oyster La Lousianne at Louie and the Red Haired Lady.

- A simple dish that was simply fried oysters prepared like chargrilled, with cheese and garlic butter on top.

Grilled Oysters at Old Ebbit in DC.
- The traditional chargrilled oysters, but with Tasso. That addition made a very dramatic change of taste; for the better.

The absinthe Dome.

I've gotten it twice, and I don't order oysters that much, its been mentioned already here. A very unique taste.

Thanks for reminding me

I would edit but I'm too lazy. That's one of my favorite app dishes in the city. I feel like I need to go commit seppuku now.

I've been on somewhat of an oyster binge as of late

I will say that the buffalo oysters at Munch Factory were everything I wanted them to be. They were so tender it was like eating oyster flavored butter. Their homemade ranch was a nice compliment to the buffalo sauce as well.

I think dishes like that are proof that you don't necessarily have to do anything too fancy to make great food. Use high quality ingredients and good techniques.

Theirs are pretty good, so are Drago's obviously, I'm not as much into the 'better than' or 'and it's not close' BS unless the difference is huge, it's not. Products like seafood vary so much from day to day I give places a lot of latitude unless they obviously screw up.

My best oyster dish was Oysters en Brouchette at Landry's in Morgan City circa 1985. Not sure if Landry's is there anymore, was not affiliated with the tourist trap Landry's. The combination of oysters, bacon and lemon butter was incredible.

My boss had sent me to MC to get a release signed and he knew I hated going to a place I considered the dregs of the Earth. He told me to treat myself to lunch at Landry's on him and to get the dish he recommended, I would think it was worth the trip. It was.
