I was just referring to Jack commenting about Costco, but the label on the meat is not from there.

NY Butcher Shop is a franchise that is owned by a guy we personally know. His location is in the high rent zip code for Bham and thusly carries higher end meats. If in town, I highly recommend their shop. Go at lunch and get a sandwich while buying some A5, domestic waygu, or some regular prime cuts. We’ve never had bad steaks from there.

Plan is to salt and pepper as normal. Sear for just a bit and serve. I’ve been fishing all day. On beer number two working up the nerve to throw a $200 steak on the grill. Brussels and potatoes are in the oven now.

Sliced into thirds for me, the wife, and my son. Thanks for the call on that. This was easily the most rich, decadent steak I’ve ever eaten in my life. No way I could have eaten a whole one.

I prefer “regular” prime cuts any day.

I love prime cuts that are beautifully marbled with fat.

I don’t get the ridiculously high priced fat that is marbled with beef.

It’s so good that you can’t eat very much of it!

Wow that looks absolutely amazing! Well done by your wife to purchase and great execution on your part.

I’ve only had a true A5 one time at an omakase tasting where they hit it with a blowtorch and holy crap it really does melt.

This is why I come to the F&D Board. I do waygu grade beef fairly regular. Sous vide is a great method for those. However, I’ve never done A5 before and came here for advice. Despite an OT troll or two, posters here pointed me in the right direction (as always). Which is why this board is one of the best here.

I get the desire to sous vide because it insures it is cooked to the right temp, but those things are so fatty it’s kind of hard to mess them up. Only way is overcooking them.

The Pig up in Mt Laurel gets waygu beef pretty regularly. Don’t think it’s A5 though. I can’t bring myself to pay that much for a steak. I rarely pay prime prices, though the NY Butcher in 119 usually has prime ribeyes or strips on sale.
