Wow, a 60 person dinner in Eunice seems like a big stretch. I was there looking for a place to eat once and there wasn't much.
And I thought you were talking TV dinners also

Well dones go under an overturned cake pan which acts like an oven in fact. The steak is cooking from both sides.

I do not think I have ever had a steak at a banquet type thing that was worth eating, except maybe once at Jubans???
When I plan an event like that I try to pick items that I know the kitchen can put out en mass, done properly, instead of nice things.
I agree the restaurant should not try and do something they can not pull off, should of gotten drinks on a timely basis, should of responded to your request for a new entree and should of made adjustments to the bill

My family is from Basile. Eunice is "going into town" for them. Kill me now.
I don't attend events there anymore.

Every time I have to go to one of those type dinners which are usually business meals, I debate over rubber chicken or jerky steak since those are usually the options. I don't eat much of either.
I do have to say.. I went to a lunch in this style a couple weeks ago at Tujaque's in New Orleans and it was perfect. We hung out in the bar a while before the lunch started, so we all had beers with us. There were massive water pitchers on the table every 2-3 people or so. Bread was brought to the table several times to make sure no one was hungry between courses. And the food was outstanding.. namely their chicken bonne femme.
But I do agree.. usually events like this have the worst food.

I found your problem
Girlfriend lives in Eunice. I refuse to eat at any place in that town. I'll make the drive to Lafayette if I want to eat out.

sounds like Banquet TV dinners could have been served for one dollar per head and everyone woulda been happy
