Why don’t more people replace water with milk on recipes?

Growing up we always replaced water with milk in things like grits, oatmeal, pancakes, or anything where water was needed where milk was a sensible substitute. It makes the food a million times better and I’m surprised how many people haven’t heard of it, let alone do it

Milk will boil faster than water and will continue to rise in temperature even after you remove from heat. It's trickier to work with. You need to manage heat better and I think that's what people forget.

Tomatoes have alcohol soluble compounds. That's one reason why wine/vodka are common additives to tomato based sauces.

Cow milk is essentially useless for humans to drink, why would i spend money on it to cook with?

I always sub milk for grits and oatmeal.
I do the same thing with chicken broth / or other broth in savory dishes when the recipe calls for water.

I dont because it adds calories. Maybe sometimes ill do a half cup of water and half a cup of milk when making oatmeal.
