In very small quantities. But even 30,000 years is a blink in terms of evolution. Eating bread in any large quantity has only occurred in the last 10,000 years. My other point being even though people have been eating gluten for a long time does not mean it caused no health issues back then.

and I just don't understand why people get so mad or annoyed if someone chooses to be gluten free.
Generally a gluten free diet is probably going to be a bit healthier and I think we can all agree that the general public could be a bit healthier, no?
As long as they are not annoying about it, why would anyone care?

I agree with this. It can be a bit annoying when people convince themselves they have a made up condition.

I mean, this is the whole argument. There's no evidence that gluten has any health effects either way for 99.9% of the population. It's just irrelevant.

it's not the gluten, but mostly the removal of bread, pasta, etc from the diet that makes it healthier

Hypochondriaism can be pretty annoying.. Which leads me to another thought. Why is it so annoying? Most other things like that, I can pay no mind to. But I can get pretty irked sometimes when my roommate starts naming off all the things wrong with him and all the medication he's on

Carbs are not as nutrient dense as other foods and are not as satiating.

My mom was diagnosed with Celiacs, first dr she laughed and didn't believe him because she'd never heard of it. A few months later after problems not going away she went to another dr and then I think, not sure, referred to an allergist. All 3 had determined she had Celiacs.
I still eat gluten because I have 4 kids and I'm to lazy and broke to figure ways around eating gluten. When I'm going through periods of time gluten free I have no stomach pain, heartburn, lethargy, and lose lots of weight. I never gone to a dr for it and I'm only 32 so not concerned with it yet.

Modern processing of carbs/ breads, pastas, etc. removes many nutrients. Then they add in all sorts of preservatives and chemical concoctions.
