I'm a pretty good cook. My downstairs neighbor and former roommate seriously offered to finance a truck to open in Houston and cook Louisiana food. I'm 100% serious. I also do think the drunk-bike-bus thing would KILL it in downtown/fq/marginy. I really don't know how we don't have those and Houston does (other than things related to the original discussion in this thread).

One of those bike bars showed up at a little pub crawl event in the warehouse district a few weeks ago. My friend talked to one of the owners and they said it was a go. I saw an ad on craigs list for people to drive and be tour guides for it here.

Fundamentally, food trucks and street food are a cultural shift for the United States, really one of the last countries to embrace street food as a part of its daily life.

Before attributing mass popularity and quick growth to a passing fad, maybe consider that the fad may just be a good idea after all.

Then you're not paying attention. The "government" in the form of the council approved the ordinance expanding food trucks. The mayor (one guy) vetoed it, and it had nothing to do with the "reasons" in your post. It's personal politics unrelated to food trucks.
