when used for a honey liqueur? Got the first two bottles of this stuff and love it. Love supporting local businesses!! My buddy has the honey business and the local brewery handled the rest.

I like local honey. I'll need a hangover rating before I try this stuff.

Would definitely give it a try.
35% is pretty strong for a liqueur as well.

That would be amazing in some hot tea with a little lemon.

I had a sample at the distillery and a sample of the honey before it was strained... both were delicious.

My wife has to figure out some dessert stuff with that one, their orange, their coffee and hopefully their strawberry... if I can get my hands on a bottle.

How sweet is it? I’m wondering how it’d be as a simple syrup replacement in a old fashion

Not extremely and the recommended route...
2oz honey simple; 2oz lemon juice; 4oz honey rum

i eat local honey on my toast every morning. Not sure I'm alcoholic enough to use the honey liquor......and what's the difference between honey liquor and mead?

No clue... I just drink stuff based on taste. But no, I don't know about using it on your morning toast. You might want to stick with the honey for that.

Mead is just fermented honey, and you're never going to get to 35% abv. I've made a few and maxed out around 12-13%.
To get that strong there has to be some distillation involved... this seems like a rum based liquor with honey added for sweetness and flavor.

I'd try that on top of ice cream for a start.

Yes, we do mead quite often and have only gotten as high as 22%. That was an apple mead that we had to baby like crazy and then let it age a several years before it turned out well. Most of my fruit meads top out around 14-16% but we have a very regimented degassing, nutrient addition, and racking schedule to get that high. You could freeze concentrate but the result is awful, IMO.
You COULD try taking 5lbs of honey per gallon of water and hit it with a champagne yeast like EC1118 and coax the crap out of it. You will end up with jet fuel that will be ready to drink around the time you retire. LOL

I would definitely try it. I’m a big fan of honey jack and wild turkey honey.

They got some 113 proof (I think) bourbon that a few my friends brag about.
