This was my exact thought, local options outweigh chain options by a large margin here. I'd almost have to go out of the way to eat at a chain here, and we eat out a few times a week.

Some things have changed. Boneless, chicken breasts, philly meat, cheese sticks, fries, pretzels, shrimp, snow crabs, and mahi are all frozen. Still putting out a decent product though. You worked for us a long time ago if you remember marinating philly meat!

While not as bad as the massive chains, please don't assume that everything in local places is made fresh. Sysco delivers to almost every restaurant, and many of your sides no matter where you eat are from them unless you are talking $20+ dollar plates.

I worked in the restaurant/ bar industry for 10 years, here's an almost guaranteed way to determine if Sysco is most of the food you are eating:

10 or more entrees on the menu = Sysco

10 or less = misty home made

Interesting. We never did pre-made items and the place I worked was cheap. Twice baked potatoes were hand-stuffed, fries cut and soaked and double fried in house, etc.

I do think a lot of your veggies in soul food/plate lunch places are from a can if that's something that bothers you. Doesn't bother me though.

I will eat the back end out of Wendy's, McD's, and other fast food. The chilis, applebees, olive gardens of the world get hate because it's shite food with no value.

Most places that sell tshirts usually can't be trusted as well.

Don't most large national chains have their own regional distribution centers rather than buying most of their stuff from Sysco?

I was part of the crew that opened the B.R. Macaroni Grill in the mid-90s. I don't think there was a microwave in the building. Most everything was made on site, including all the pasta sauces. I'm trying to remember if they made the bread and desserts on site or if they came over frozen, but it's been a long time. I THINK they made desserts. I think.
One of the managers they brought in for training said that his restaurant got a call from the local Olive Garden "Hey, our truck was delayed and we didn't get our bags of Alfredo sauce. Can we borrow some from you guys?" They couldn't get over that Macaroni Grill made their own Alfredo sauce.

Copeland's had very little frozen.
Joes crab shack everything was frozen.
I've never seen a restaurant that didn't use frozen shrimp fwiw.

Ha ha. It is definitely not true though.

They make their soups and sauces during the morning prep. They are made in big kettles. The alfredo is a powdered base that is added to butter, heavy cream , while milk and grated Parmesan.

They have a buyer that tells sysco (or other food distribution) what to get and sysco holds it and trucks it for a certian %. Some common stuff they allready have stocked

I worked at Wendy's in the late 90's (during the time they removed the salad bars).

Frozen: French Fries, Regular & Spicy Chicken patties, chicken nuggets, pita bread came in frozen.

Fresh: Tomatoes, cucumbers, lettuce, onions, potatoes for baking all came in fresh in produce boxes and were prepped every morning.

Canned: tomato base for chili
