A mexican tamale is usually slow cooked pork wrapped in masa and steamed in a corn husk.
Masa is corn that has been husked with a lye bath, rinsed and then ground into a paste with corn flour.
corn meal is ground dry corn.

Much like Delta Tamale's the best ones you are going to get are from random spots, like in Lake Bruin.
The lady that sells them at West Alabama Ice House has pretty damn good ones.

Got 4 dozen from L&H Tamales in Zwolle last weekend. Very good stuff.
