Who else is addicted to a tamale?

I can't stop eating them. The best I have found is a Mexican spot that has a thin cornmeal shell, and the insides cook through. Any good homemade recipes?

I prefer Mississppi Delta Tamales to Mexican Tamales 9 out of 10 times.

I find most to be dry and filled with too much of the corn mash.

I've pretty much given up on them

Yeah, that's a problem. A thin outside casing is critical.

I like a good tamale.

I'm a fan of three types.
Delta Tamales, I usually buy these from Guillory's Deli, they just opened a new spot on Cleary and Airline.

Mexican style I buy from Ideal usually. Pretty good, nothing like what I could get in Austin and Sn Antonio.

For Honduran style my friend's mom makes them, they are really good. Huge chunks of porke, veggies, olives and capers and then wrapped in masa and then a banana leaf and then steamed.


Mexican syle is the easiest to make just buy and fill masa and wrap and steam. Though Delta is pretty simple as well ;congeal cooked beef and fat into an orange meat mixture, season, roll in corn meal, wrap in parchment paper and steam or boil in sauce.



Speaking tamales makes me want to go all in and get me a tamale po-boy with extra tamale gravy..

I'm not the biggest tamale fan but they can be pretty good. And that's the problem, quality varies wildly even when you get them homemade from a mexican abuela.

If you ever find yourself in St. Joseph LA, and the light bulb is on, whip in to Walker's hot tamales. There is no sign declaring it's Walker's hot tamales. Or sign at all. But on the main drag from St.Joe to Lake Bruin you will see cars on the side of the road by a little red and white building with a stark naked lightbulb shining on the front of it. Best I've ever had.

There are two places in Vicksburg that I always swing by a D.C. eat some when I'm driving through that area. Wish someone in Mobile made them like those.

They still have their old location right around the corner as well. Said they are keeping both for now. Just odd to have two locations in walking distance.
