You can't cube your own pork belly?

You have a carniceria anywhere nearby?

Costco for the pork belly.
They also have something in the pharmacy for Low-T so you can nut up and cut your own belly.

You have a Sam’s Club? The one in fricking Hot Springs AR has carried it for a year or so, and Shreveport finally had it last week.
I have bought it at an Asian market, but the last time it was old and funky. Tossed it out. Guess they don’t have enough turnover to ensure fresh product.

How long and at what temp to get that deliciousness??

I was hurried and not paying as close attention. 3hrs at 250 (should have been 225 and 3.5hrs). Then put them in a foil pan with homemade vinegar bbq sauce (with honey addition for stickiness) and back in the 250 for 2.5hrs.
They weren't bad, but some of the day wasn't rendered properly while the meat was a little dry in places. Will improve next time.

If you're looking for cracklin pork belly, Costco's isn't the best. But for anything else it's great and a good price.

Mexican butcher. They usually have really good prices on pork belly.

Why go low and slow with a fatty cut like pork belly?

Fat rendering was my assumption.

Last one I bought was at Whole Foods (Shreveport). Haven't looked lately, but assume WFM still carries them.

Costco is where I would go. They have butchers on site, maybe one of them would cube it up for you. If not, it ain't the toughest thing in the world to cube pork belly. (There are no bones to deal with)
I bought pork belly at La Morenita on Florida once. It was frozen. Think Costco was a little cheaper. They also have butchers there, but brush up on your Spanish before you head over.

What do you recommend? I'm thinking about doing one for New Years
