Where do y'all get your sausage/boudin casing?

How well do you like the LEM stuff? I'm thinking of doing 25# of Italian Sausage and 15 or so pounds of andouille this weekend and the last natural I ordered I wasn't super happy with.

I get the casings in a white plastic container and they say the casings will last at least a year kept refrigerated.

They are the ones that make about 1 in. round sausages and are natural casings.

The only thing they recommend before use it so rinse them off both inside and outside before stuffing them. They slip on easily on the stuffing tube and are pretty tough and don't split easily.

I've made at least 50 lbs. of sausage so far with no problems.

Online at Butcher and Packer. Hog casings are relatively easy to find, but I use beef casings for andouille and that’s tricker to find in stores. But thankfully it’s 2019 and can just have them mailed to me.

Any of the local smokehouses should carry them. Years ago I bought some at Jacobs in Laplace. Call some of the independent food markets.
Stay away from the "Home Pack" brands they are small pieces.

I used the ones from Academy before and did not like them. Go to any grocery store that makes sausage and they should sell them. Not cheap though.

What about making boudin. Is there a difference in the casing for that compared to sausage?

No. You just want to use a real natural casing and not some of the synthetic ones on the market.

Products that use synthetic are some salamis that have the casing that would choke a horse if you tried to eat it. Also, Bailey's Andouille from Laplace uses synthetic casings and you need to peel them off before using in your food.

Amazon has natural hog casings. Have used for fresh sausage and boudin.

I have bought it at Rouses before. Just ask the butcher. he will bring a small plastic container with some water and how ever much casing you need. I was only making like 5 pounds and it was less than $3 if I recall correctly.
