here's the reason you'll see chains in a new development, esp. one anchored by a national big-box retailer. the developer of the building had to pay a premium for the land because of the proximity to the Costco, that equates to higher rents.
Additionally, in order to get a construction loan from the bank, or to satisfy his capital lenders, he (or she - sorry women of real estate) has to pre-lease a certain % of the building with tenants with good creditworthiness. that typically means multi-store operations that have the ability to offset slow starts at new locations with income from established stores.
OR the owner of the locally owned restaurant/biz will need to personally guarantee the lease and have to prove funds to do so. so say on a 5 year lease for 4,000sf at oh, conservatively $15/sf, he's going to have to have liquid assets (outside of what it's costing to start the restaurant) of $250k. again, that's liquid. most young chef's simply don't have that laying around.

It's a Mexican grocery store & meat market. Authentic Mexican food, and very affordable plate lunches. If you're looking for a place to bring a date and drink margaritas, this isn't it. Just real groceries that are better than the commercial and tourist promoted stuff.

It did ok. Then it was sold and the new owners did not do a good job. It probably didn't help that their biggest customer base was the oilfield lunch crowd.

This place is ridiculous, $20+ for 3 street tacos & a soda. It is a ripoff & it's doesn't even taste good

I pass by there often and have eaten at the Eddie's in Ellic. My guess not enough people knew about that location and BBQ is a hard sale in Lafayette. People would rather eat across the street at Wendys or Popeyes than get a brisket or pulled pork sandwich.
Luther's use to be my go to but it's been gone for 10+ yrs. I hear decent things about 2Paul's BBQ but have never been.

Dax on Verot has Bar bq on Wednesday's and their brisket is pretty darn good.

I think BBQ is a tough sell for a lunch spot, but that's just me. As good as Dwight's is, I don't go for BBQ during the week.

El Portrillo on Moss St. In the old Puzza Village...not the fanciest but food is authentic and dirt cheap. Nobody that works there speaks any English! Service is good and fast!

First time I went to Urbano's, I didn't care for it at all. But there are a few go to tacos I've discovered that I love. It is definitely pricey for what you get though.

I forget about this place since it's on a side of town I'm rarely on anymore. We used to go there every so often for lunch when our office was on Pinhook, always seemed like another Picantes'. Didn't the owner/manager used to run Picantes?
