I’ve had a hard time finding Raos in stock lately.

i prefer the san marzano crushed tomatoes over the whole. already basically pizza sauce consistency, just add herbs garlic, oil etc and reduce a bit.

I use a can of those high quality Napoli whole tomatoes as my base.

Dice some garlic, about 5 toes in a couple of TBs of EVOO until fragrant. Add a couple of shakes of crushed red pepper and 2 tspn of oregano. Add tomatoes and break them up with a flat spoon. Add a bit of sugar to taste and reduce to your liking.

Works for me.

this is what i do except i just strain the tomatoes and save the juice to drink. use the strained tomatoes for the sauce and spice it up a little, garlic and salt and a little olive oil. use Trader Joes's dough

If you don't want a sauce to necessarily 'sing', go the homemade route.

If you want your sauce to really have some character, have to recommend Pastorelli's out of Chicago. It's available on Amazon
