Champignon has a triple creme with mushrooms that's really good but triple creme without mushrooms is still excellent.

Horseradish white cheddar is good on roast beef or ham sandwiches.

The best for a grilled cheese, imo, is Jarlesberg.

I remember it well. It was back in the early 80s. A wedge of very sharp cheddar. So dry it had cracks in it. Took a knife and made very slim slices. Put it in a plate and poured a glass of red wine after work. Ah, those were the days.

Go to Whole Foods and ask at the cheese counter. They actually sell a cheese that is used for making queso.

Martini. Next time your in Whole Foods looking for some good cheese to try, ask for some Chabrin, Ewephoria, or Usso Orrati. 3 of my favorites.

Fromager D'Affinois. I can't believe this thread went through 3 pages covering everything from gubment cheese to unpasteurized and no one yet mentioned it. It's so creamy and delicious, sometimes I just eat it off a spoon!

I have found queso cheese at Albertsons and other supermarkets. Queso Fresco and Queso Blanca. Mild, white cheeses. Or did you mean the queso dip?

Spanish queso fresco (queso de Burgos, for example) and membrilllo (quince meat marmalade) is fantastic.

At the BR Farmer's Market, there's a cheese maker that has serveral flavor infused goat cheeses: fig, black pepper, etc. Worth checking out.

What is America's obsession with having to name a "favorite" everything? Why can't food items simply stand on their own?
