Spent the weekend at a friend's lakehouse doing the boating thing, but thawed the chopped point from a prime packer I smoked a few weeks ago. Added my own BBQ sauce and some apple wood to the MES for few hours and here are the results:

10# prime brisket went on at 8 last night at 250 and was done at 4am. No idea how she cooked so quick but it came out great.

Looks great! I wonder if the cut was lean and it did not hit the stall.

It’s a prime brikset, didn’t seem lean at all.

Your brisket looks good, baw.

On a related note, you ever change your gasket? Gasket issues?

I changed mine to the Rutland gasket. No issues since. It’s pretty much indestructible.

I'm thinking that my lid is not aligned correctly. I changed my gasket last year to the newer one from BGE, but it's breaking loose at the 12 o'clock position, because the lid grinds down on it during opening and closing. Didn't do this for the first year or so. Have you experienced this?

I’ve had that issue before. I adjusted some bolts on the bands... Can’t tell you how I did it, it’s been a few years. The bands on these things suck when they get out of alignment. The new ones supposedly fix that issue. I’ll be getting one soon.

I've got a hanger steak dry brining in the fridge right now. Going on the grill later tonight.
