Boudin is a side dish in itself. Get a loaf of Evangeline Maid bread, some cracklins, Steens syrup, and beer and let the party begin.

Not familiar with that brand, but I agree on stuffing it in a bell pepper. I usually add a little bell pepper to the boudin mixture with a generous helping of chopped green onions. If the boudin isn't well seasoned, I'd season it. What I get is fine, but it's not a grocery store brand, so yours might need a little punch. Have a green salad with it.

I think Zummos is made around Beaumont, Tx. I've never heard of boudin sausage but some beer, white bread and mustard and you should be able to get it down. You should get on the Internet and order the real stuff.

The grade they gave it is better than the description. It looks a bit strange to me. I thought maybe it had sausage in it since OP described it as "boudin sausage".

Now, I want some boudin.

Chimes makes a boudin omelet which is the bees knees. It has creolaise sauce on top and comes with cheese grits.

I like baked beans and cole slaw, the sweetnes from the beans goes well with Boudin and the slaw has a nice vinigar kick to it plus you will need that fiber to push all that rice through the body.

its all about balance
