Good smoker. 18" or 22"? I have a few of them, and on a couple I run them dry. Quick and inexpensive mod for you....go to Academy, and buy the replacement charcoal disk for an Ole Smokey. Place it on the tabs for the bottom cooking grate as a heat deflector, and go with no water pan at all. Less fuel consumption, and will cook similar to a stick burner. You can also go with no deflector at all, and cook some awesome chicken on the top grate over the coals.

I have the 18, but it's about 10 years old. This spring, I'm going for the 22. Great idea on the disk. I hate cleaning that water bowl.

Both. You can use either briquettes or lump, and some wood chunks, chips, or pellets. I use B&B Charcoal, and mix up the different types. Go with a filled basket of unlit, layered with whichever wood product that you use, and a little lit charcoal over the top.

This is dumb, I know how to use a stick. I also know what I like, but I don’t feel like messing with a stick. I can get damn good meat from a pellet. You should try smoking on a good one, not something cheap.

Takeout won’t use the rub and type of wood I want. I can’t pick the meat especially in an area with not much brisket options for takeout like Tenn. Lots of reasons to still smoke it yourself but want ease of use.

I have a wsm 22 and a primo oval xl

My granddaddy would be a baby xl gravity feed from stumps smokers

Would look at a Cookshack if going pellet smoker

Are you set on getting a gas smoker? For that price range, capacity, and ease of use.....I'd maybe consider one of those pit boss cabinet pellet smokers.

I've found that smoker for much cheaper than the website's MSRP.
About a hundred less, l think. Saw a pit boss at Lowe's tonight. Will look into them.

Yeah that's how I use it now, was just trying to see what you meant by saying it cooked like an off set.

I had a gas smoker and I hated having to refill the wood chips every hour or so, which prevented me from doing overnight smokes. Also didn't like not being able to control the temp. Those were both key for me upgrading to the GMG.

Yep, an arse ton of comp teams use insulated verticals with temp controllers now that can blow grandpa's stick bruner out the water. It is as set it and forget it as an electric. I personally would not buy an electric as I think you get the same functionality and better product with a vertical smoker with a temp controller or a pellet smoker, but the idea that it's either a stick burner or take out is absurd.

If you are just looking to get into sausage and have the space, I would consider building a DIY smokehouse. They are pretty easy. I would do one if I had the space to hide it somewhere.

You can also cold smoke in the BWS. People use one of those little pellet trays in the firebox and fill the water tray with icewater if it is hot outside.

Neva wanted a smoker of my own I have several friends in town with big homemade smoke houses and its fun to go visit and any of them would hapily smoke any thing I wanted. That said SiL gave me this for Christmas.

It's small so I'll set it up outside and give it a try seems good for a small smoke or to give that smokey taste to chickens for gumbo and such. May make a batch of grandpas jerky for ole time sake
