What should I do with Kimchi?

I pickup us a jar from the Asian market and don't know what to do with it.

Eat plain, like a side dish.
I've also chopped it up and mixed it into fried rice or stir fries.
Hell, I've even put it on boudin. I once said that I may be the only person on the planet to eat boudin with kim chee, but someone on here claimed they do it too.

Kimchi Fried Rice Recipe
I make this all the time. You can add whatever protein you like....chicken, pork, shrimp. I make thia chili roasted Brussels Sprouts and put that on top of the finished fried rice. I also add generous amounts of fresh Basil, Mint and Cilantro on top of the rice before eating.

Grill some chicken breast marinated in Teriyaki, make some rice, stir fry some veg, fry some egg rolls, serve Kimchi as a side.

I'm partial to this kimchi fried rice recipe, because it has bacon in it.

I've also put kimchi on top of burgers. And it gives cheap ramen a big boost.
The stuff is pretty easy to make.

Definitely kimchi fried rice!
Also; kimchi braised kale, kimchi & broccoli salad, kimchi egg rolls, kimchi & cabbage slaw...

Take a pork butt, just a small 7# or so. Mix together 3 tbsp of salt with 3 tablespoons of sugar. Coat the pork butt in this, place in a dutch oven, cover and park in fridge overnight.
Remove lid, put in 350 degree oven. Baste every 30 minutes or so, for about 4 or 5 hours. Remove from oven, put some brown sugar (optional) on the fatty side, place fatty side up and broil til it bubbles.
Serve with romaine, white rice, kimchi, ginger scallion sauce, and lots of beer. Take lettuce, scoop of rice, some pork, kimchi, and ginger scallion (can also get some ssamjang- Korean bbq sauce in essence).

That recipe that you linked looks doable.
