What kind of oil do you guys fry your pork chops/chicken in?

Cooked some boneless pork chops tonight in some canola oil. They were tasty, but I’m not so sure canola is the “healthiest” option. Hell, fried food isn’t a healthy option to begin with, but if I can make it any better, what other oils could I try? It is my understanding that vegetable oil is just as unhealthy.

Olive?
Extra virgin olive oil?

I should add that it was a shallow fry. Half the thickness of the chops were above the oil.

I assume cold-pressed vs refined?

You want something with a high smoke temp like...

Other oils that have high smoke points (400 degrees F and higher) include avocado oil (refined), almond oil, corn oil, canola oil, grapeseed oil, peanut oil, safflower oil, sesame oil and sunflower oil. These oils are better suited for cooking at higher temperatures.

Avocado oil or pure (non virgin) olive oil for pan frying.

Canola oil is supposed to be one of the less unhealthy options for frying that has a higher smoke point. Peanut oil is a waste of money for most things, I use cottonseed oil. It has a much better flavor and last a long time, it’s also half the price of peanut oil.

I did some in coconut oil the other night. They tasted great as always.
I had some leftover coconut oil b/c we used to use it with our popcorn machine, that recently broke.
Not something i would do regularly though, as coconut oil isn't cheap.

Canola smells awful to me, like rancid fish.
Sunflower, avocado, peanut are my usuals.

Pan frying, I use avocado oil for everything.

If I’m deep frying, I use peanut oil.

Grapeseed is my preference for high heat pan frying due to its smoke point and lack of any real flavor. That said, it's expensive and if you're just frying up some pork chops you (hopefully) aren't using high heat which mitigates the need for your oil to have a high smoke point.

At a medium temperature you can use any oil, even lard, without facing any real risk to your health (in moderation). It's when the fats start breaking down in these oils, via heat or overuse, that the most unhealthy attributes begin to come into play.

Beef tallow's always a good option but rice bran oil gets the job done too.
