Las Vegas has American Fish by Michael Mina, Bouchon by Tom Keller, Emeril's New Orleans Fish House, Restaurant Guy Savoy, Joel Robuchon Restaurant, Picasso at Billagio and many more world class restaurants. You're able to try foods from around within a 2 mile strip. I'm not a gambler but I go there to eat once a year.

Las Vegas has a great collection of awesome high end restaurants but do they have anything other than that?
Serious question btw, I've only spent a week or so in Vegas but I got the impression outside of the chef restaurants you were basically looking at chains.

It is NYC, TOKYO or PARIS.
I think any of these three could be argued. I would give it to NYC based on sheer variety. I would respect bourdain opinion here though.

Vegas is a joke on any list, much like Orlando. Manufactured cities with celebrity chefs. Nothing grown from any culture or local inspiration.

Tokyo and Kyoto Japan. Becoming a chef is a lifelong journey. The preparation of meals and flavours I experienced there were unbelievable.

Most people in the know will tell you tokyo...only been to Paris and nyc. Nyc has diversity so I give them over paris.
