To address OP: He’s buying brisket quality the average home cook isn’t paying for. He has much better insulated smokers than the average home cook. His place has also cooked a trillion briskets, so they can better adapt to inconsistencies in weather and wood.

Louie Mueller's BBQ is about 25 minutes north in Taylor and is just as good. Can sleep in, wait in a 10 minute line if any, eat lunch there, and make it back to Jester King all while the Franklin fan bois are still waiting in line.

No, it’s not. It is good, top tier even, but not on the same level.

The drop off between Franklin and a place like LM, la bbq, Truth isn’t that significant so I agree people may be better served going elsewhere to get damn good bbq. I’ve had brisket pretty damn close to Franklin at a place like Miller’s Smokehouse in Belton. But I think for overall quality and consistency, everyone should go to franklin at least once.

Louie Mueller's brisket is generally good but inconsistent. I have been there for lunch about 25 times since 2007 and occasionally it is top notch, falling apart tender and tasty. Most of the time not quite so good. I suspect inconsistent meat quality is the reason.
Also, only once have I seen no line. Most of the time, wait is at least 15 min. or longer. There seems to be regular people turnover at the order/service counter which doesn't help.

Well, Dallas has a lot of new barbecue places since Rouge had to leave town a few years ago, but I can't claim to be an expert. I did taste some Franklin's a couple of years ago....I chewed and then spit it out.....it was damn good.

I've gone to LM 2-3 times a year since 2011, and I can only remember two average/disappointing experiences, and one was when I took it to go and ate 20 minutes later. And probably only a handful of times at most the line was longer than 10-15 minutes during lunch (always during the week). Probably a dozen or more times there was 0 or 1 person/group at the counter when I walked in.

This is definitely fair. It is truly excellent. But speaking as a guy who might make it to Austin 2 weekends a year I probably wouldn’t do it again.

Obviously if I lived in Austin it would be a different story.

What smokers are you looking at? It’s some of the thickest rolled steel of any smokers I’ve seen, they’re incredibly well seamed + don’t leak smoke, and their fireboxes are rock solid.

It’s smoked brisket folks. Never knew there is/was in the realm of wine, coffee/beans, bourbon, beer/ales/stoutes, charcoal, crawfish boiling techniques. Learn something everyday

That's closer to 40 minutes north then an hour drive down to Jester King from there. Weird choice of places to flex about wasting time.
